Roasted Artichoke

Ingredients:
1 Large Artichoke
1/2 Onion
1 Lemon (1 half reserved, other half juiced)
2 Tbsp Olive Oil
2 Tbsp Butter Melted
1 Garlic Clove Diced
Pinch of Salt & Pepper

Method:
Preheat oven to 425
Place artichoke into pot of water with half onion and half of the sliced lemon and heat until boiling. Boil for 2-3 minutes.
Sprinkle the top of each artichoke with the diced garlic
Combine melted butter, olive oil, lemon juice and seasonings and pour over top of artichoke. This will also help get the garlic pieces deeper into the artichoke.
Roast for ___ minutes
