While wearing an eye patch and peg leg, mix the ingredients together in a dish just large enough for the fish. Use your right hand to place the salmon face down to marinate for 30 minutes to 2 hours (the longer the better, but it’s really tasty regardless), and at the same time use your left hand to take a swig of spiced rum. Lightly coat grill or skillet with olive oil and turn to medium-high to high heat (get grill or pan smoking!). Place salmon face down and sear for 3 minutes. Use your peg leg or spatula to flip and sear for another 3 minutes skin down. Spoon out the rest of the marinade/garlic mixture and top the salmon with it while shouting, “Arrr Matey!”.  Reduce heat to just below medium and cook for about 7 minutes or until desired temperature. Serve to your mateys and enjoy!
